My Very First (EASY) Victoria Sponge

This Easter I’ve been learning lots of new skills including making my very first Victoria Sponge Cake to take to my boyfriend’s parents for Sunday Lunch.

I looked around online and found this great Nigella recipe on the Something Cakey blog. I struggle with recipes sometimes that contain so many ingredients and are really difficult to follow. This is REALLY EASY. If I can make it then anyone can. If you need a cake that can impress then here it is:

Ingredients

250g each of self raising flour, castor sugar, butter

4 large eggs

2 tsps baking powder

2 tsp vanilla extract

2-3 tbsp milk

Preheat oven to 200*C

Method

Add butter and sugar to a bowl and cream.

Alternate a couple of spoonfuls of flour and 1 egg until all the flour is added. add baking powder.

Add vanilla extract and milk until consistency of a thick batter.

Pour into 2 cake tins (I used 2 9inch non-stick Asda Smart Price tins and greased them with butter ) and bake in oven @ 200*c for 15-20 mins. Then turn down oven to 180*c and bake for a further 35-45 mins. Keep an eye on it and reduce heat a little if you think it is too hot! I moved mine lower in the oven.

Leave to cool in cake tin for a while then turn out onto a wire rack. Leave until completely cool to ice however you choose. I used 3/4 250g Jar of Jam and 3/4 a tub of Betty Crocker Buttercream style icing.

Birthday Cake

As my Birthday is coming up on the 11th November I got into a big discussion last night about Birthday cake. This is a big part and often overlooked element to having a Birthday particularly because I love cake, especially Birthday cake.

My boyfriend insists you can’t go wrong with a Marks and Spencer’s Vanilla Sponge with icing. However, he reminded me, I am quite partial to some Chocolate Caterpillar Cake. I then told him about the cake I am desperate to try after seeing it on LK Today’s Lust List a few weeks ago… The Giant Pink Fondant Fancy Cake. I love the mini Mr Kippling ones so this is perfect. I hope it tastes as good as it looks.

This is not in the same league as the one I had for my 21st Birthday which looked like my twin sister and I in our Smart Car. Mmmmmm CAAAAAAKKKEEEE!

“The Hottest Sauce in THE UNIVERSE!”

I have just got back from London where I have been visiting friends for the bank holiday. It was hotter than I thought it would be: I went to a BBQ where I was offered a sauce to put on my slightly char-grilled sausage. The Chef took great delight in telling me it was “The hottest sauce in THE UNIVERSE”. He handed me a bottle of Dave’s Gormet Insanity Sauce.

The hotest sauce in The Universe“Really?” I thought…”It can’t be that hot!” I proceeded to scoop up a large dollop on the end of my sausage and…”It’s fine…I think you’ve been had…its…” Then the fiery burn arrive and I spent the next 15minutes with a red face and my tongue hanging out. Lesson learnt!

Buy some and punish those friends who never back down from a challenge!
